Nothing says breakfast like waffles! They are filling, so versatile and oh so easy to make! I love that I could prepare the batter, spray the waffle maker, pour it and forget about them…  for a couple of minutes at least. Set it and forget it, that’s my type of dish 😉

This was my first time making waffles using Bob’s Red Mill All-Purpose Gluten-Free Flour and I must say that I was thoroughly impressed! The end result was surprisingly light, as light as gluten-free could be haha! Try it out and let me know how it goes 😃

Sweet Blueberry Waffles

Easy to make, gluten-free blueberry waffles!

Ingredients

  • 1 c Gluten Free All Purpose Flour
  • 1 1/2 c Almond Milk
  • 1 c Blueberries
  • 1 Egg
  • 1 tbsp Apple Cider Vinegar
  • 2 tbsp Organic Cane Sugar
  • 1 tsp Vanilla Extract

Instructions

  1. In a small bowl, add milk and apple cider vinegar. Set aside and let it rest. This will give the almond milk a buttermilk consistency.

  2. In a large bowl, mix in your flour and sugar. Add the egg in and mix well.

  3. Add the milk mixture and the vanilla extract and mix until there are no lumps left. 

  4. Spray nonstick spray, add batter and add in you blueberries. Close waffle maker and wait for the ding while jamming to your favorite song!  

  5. Serve, drizzle with syrup and enjoy!!!

 

I love that these guys don’t look perfect, the blueberries all seem to burst and it gave the waffles a sorta splattered effect. Pretty neat, IMHO!
