Avocado Toast Inspired by Tim Gurner

Thought up while listening to “Imagine Dragons – On Top of the World”

An article on the Business section of the NY Times is not usually where I gather inspiration from but yet here we are. After having read about Tim Gurner’s correlation between millennial’s spending habits and our ability to own a home, my interest was peaked. He is quoted as saying:

“When I was trying to buy my first home, I wasn’t buying smashed avocado for $19 and four coffees at $4 each,” he said.   – Tim Gurner, real estate mogul in Melbourne.

I was as outraged as the next millennial but Tim Gurner’s statement got me thinking about just how much money we spend on brunch. I do not believe that we spend outside of our means but perhaps it is time to reconsider our weekly brunch habits. Now please hear me out, I am not saying ‘bye’ to brunch anytime soon, I am simply proposing that it becomes more of a special occasion thing than an everyday thing. Deal?

Avocado Toast is easy to make, inexpensive and a guaranteed hit! So this weekend instead of going out for brunch, why not host brunch for a couple of  your friends? Not only will you save money, you will also not  worry about watered down cocktails 😉 Rosé Sangria anyone?

Avocado Toast inspired by a real estate mogul in Melbourne who claimed millennials spend their money "buying smashes avocado for $19 and four coffees at $4 each".

  • 1 Haas Avocado
  • 1 tsp Apple Cider Vinegar
  • 1 Radish wash and rough chop
  • 5 Cherry Tomatoes wash and chop
  • 2 C Alfalfa Sprouts rinse and dry
  • 4 Eggs
  • 4 pieces Gluten-Free Sliced Bread toast if you wish
  • Sea Salt to taste


  1. Gently mash up your avocado and add the apple cider vinegar. 

  2. Boil water and poach your eggs. I poached mine, one at a time but do as many as your comfortable with. Jamie Oliver put together a wonderful video on how to poach eggs which you could check out here. 

  3. Chop up your radishes and tomatoes and rinse off your sprouts. Set aside.

  4. I toasted my bread but this part is optional.  Assemble your toast with a generous layer of avocado, top it with your sprouts, tomatoes and radishes. 

  5. Finish it off with your poached egg and enjoy!
